Erica Underhill joined the UCF Athletics staff in the summer of 2021, working as an assistant director for performance nutrition and was promoted to director late in the year.
A graduate of the University of Colorado - Colorado Springs with a bachelor's degree in health sciences and an emphasis on nutrition, Underhill has collegiate athletics experience with the University of Utah as a sports dietitian. Underhill has related performance nutrition experience with Team V at the United State Olympic and Paralympic Training Center in Colorado Springs, Colorado and as a high school athletic team nutrition educator for BRelentless, a performance facility in Morton, Illinois.
Underhill has also spent time as a clinical dietitian with Sodexo/UC Health Memorial Hospital, a community research assistant with OSF Healthcare, and a teaching assistant at UCCS.
Having earned her master's degree in nutrition and curriculum development from Bradley University, Underhill is a registered dietitian nutritionist, a CPSDA active professional, and a member of the National Society for Leadership and Success.
Underhill is also certified in SafeSport Mandatory Reporting for Vulnerable Populations, CPR/First Aid/AED basic life support, managerial safe food handling, and CITI Ethical Research Training.
