Rachel Rodriguez joined the UCF sports nutrition team in March 2025.
A former NCAA student-athlete and softball coach, Rodriguez has experience working with both collegiate and professional athletes, including serving as a Minor League Baseball dietitian for the San Francisco Giants’ Double-A affiliate.
Rodriguez began her career in sports nutrition at her alma mater, Indiana University of Pennsylvania (IUP), where she was a student-athlete on the softball team (2017–2021).
After graduating, she expanded her expertise in clinical nutrition, private practice, and NCAA Division I and II athletics.
Rodriguez arrived in Orlando after spending 18 months working for VCU’s sports nutrition department, including a brief term serving as interim director of sports nutrition.
Rodriguez is a certified dietitian nutritionist who earned a bachelor’s degree in nutrition and dietetics from Indiana University of PA. She went on to earn a master’s degree in integrative exercise science from Cedar Crest College, where her sports nutrition research received an award from the 2022 Food and Nutrition Conference Expo (FNCE) reviewers.
