Mari Sundbo joined the UCF staff as an assistant coach in August 2019.
Sundbo's first season with the Black and Gold was shortened to just one race as the COVID-19 pandemic led to the cancelation of the 2020 spring seasons. In the lone meet of 2020, UCF swept the Metro Cup for its 10th straight Robin Yeuell Trophy.
In 2021, Sundbo worked with the fours, helping the Knights to a runner-up finish at the American Athletic Conference Championship.
She joined the Knights after three seasons as an assistant coach at Bucknell where she was involved with all aspects of the program, including operations and recruiting. She led the varsity four to a silver medal at the Patriot League Championships in 2018 and 2019 and aided the team in a powerful finish as a program in all boats seconds off Navy to place second in team points at the 2019 championships.
A 2015 graduate of the University of Minnesota, Sundbo was a three-year member of the Golden Gophers women’s rowing team. Sundbo was a team captain in 2014-15, a three-time Academic All-Big Ten selection, and earned the Cheryl Wick Scholarship and Donna J. Olson Award in her final season.
Following graduation from 2015 to 2016, Sundbo was the novice boys head coach and varsity assistant at Twin Cities Youth Rowing Club in Edina, MN.
